¼ cup Marcum Gourmet Seasoning Rub (such as Beer Can Chicken, Smokey Mesquite)
Directions
Preheat oven to 350 °F.
Pat chicken dry with paper towels.
Rub oil all over chicken.
Season chicken with rub; distribute the seasoning evenly over the chicken, including under the skin and in the cavity.
Roast chicken for 1 ½ to 2 hours (time will vary depending on the size of the chicken). Baste the chicken occasionally with pan juices. Roast until thigh is 170 °F and breast is 165 °F.
