SEASONED ROAST CHICKEN

Ingredients
  • 1 whole fryer chicken 1300gr  
  • 3 Tbsp. Medeiros vegetable oil
  • ¼ cup Marcum Gourmet Seasoning Rub (such as Beer Can Chicken, Smokey Mesquite)


Directions
  1. Preheat oven to 350 °F. 
  2. Pat chicken dry with paper towels.
  3. Rub oil all over chicken.
  4. Season chicken with rub; distribute the seasoning evenly over the chicken, including under the skin and in the cavity.
  5. Roast chicken for 1 ½ to 2 hours (time will vary depending on the size of the chicken). Baste the chicken occasionally with pan juices. Roast until thigh is 170 °F and breast is 165 °F.
  6. Allow chicken to rest 10 minutes before carving.
