Appetizer: Bacon Cupcakes with Salad

Ingredients

Bacon cupcakes:

  • 1 pack bacon
  • ½ cup onion, chopped
  • 3 cups mozzarella cheese, grated
  • ½ cup green onion, chopped
  • 3 eggs
  • 4 slices ham, chopped

Salad:

  • 2 cups lettuce, sliced
  • 2 tbsp olive oil
  • 1 tomato, chopped
  • Salt and black pepper to taste
  • ½ cup onion, chopped
  • 1 tbsp mayonnaise
  • ¼ tsp mustard
Directions

For the Bacon Cupcakes:

  1. Preheat the oven to 350°F (175°C).
  2. Line a cupcake tray with aluminum foil or use aluminum cupcake molds.
  3. Wrap bacon inside the molds to create a cup shape.
  4. In a bowl, mix onion, mozzarella cheese, green onion, eggs, and ham.
  5. Fill the bacon cups with the mixture.
  6. Bake for 10 minutes, or until the cheese is melted and the bacon is crispy.
  7. Remove from the oven and let cool slightly before serving.

For the Salad:

  1. In a large bowl, combine lettuce, tomato, and onion.
  2. In a small bowl, mix olive oil, mayonnaise, mustard, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
