Appetizer: Bacon Cupcakes with Salad

Ingredients
Bacon cupcakes:
- 1 pack bacon
- ½ cup onion, chopped
- 3 cups mozzarella cheese, grated
- ½ cup green onion, chopped
- 3 eggs
- 4 slices ham, chopped
Salad:
- 2 cups lettuce, sliced
- 2 tbsp olive oil
- 1 tomato, chopped
- Salt and black pepper to taste
- ½ cup onion, chopped
- 1 tbsp mayonnaise
- ¼ tsp mustard
Directions
For the Bacon Cupcakes:
- Preheat the oven to 350°F (175°C).
- Line a cupcake tray with aluminum foil or use aluminum cupcake molds.
- Wrap bacon inside the molds to create a cup shape.
- In a bowl, mix onion, mozzarella cheese, green onion, eggs, and ham.
- Fill the bacon cups with the mixture.
- Bake for 10 minutes, or until the cheese is melted and the bacon is crispy.
- Remove from the oven and let cool slightly before serving.
For the Salad:
- In a large bowl, combine lettuce, tomato, and onion.
- In a small bowl, mix olive oil, mayonnaise, mustard, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
