Beef Bok Choy Stir Fry

Ingredients
For the Beef Marinade:
- 2 packs of flank steak, sliced
- 2 tablespoons light soy sauce
- 2 tablespoons dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon baking soda
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil or olive oil
For the Stir-Fry:
- 3 tablespoons peanut oil or olive oil
- 1 white onion, sliced
- 1 bunch green onion, chopped
- 1 tablespoon garlic, chopped
- 1 pack Bok Choy, chopped
- 1 cup white vinegar
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 cup water
- 1/2 teaspoon black pepper
For the White Rice:
- 3 cups white rice (washed)
- 4 cups water
- Salt to taste
Directions
- Prepare the Beef:
- In a bowl, combine the sliced flank steak with light soy sauce, dark soy sauce, oyster sauce, brown sugar, baking soda, cornstarch, and sesame oil or olive oil.
- Mix well to coat the beef evenly. Set aside to marinate while preparing the vegetables.
- Cook the Rice:
- In a pot, add the washed white rice and 4 cups of water.
- Add salt to taste.
- Bring to a boil, then reduce the heat to low. Cover and let it simmer until the water is absorbed and the rice is cooked. Set aside.
- Cook the Onions:
- Heat 1 tablespoon of peanut oil or olive oil in a large pan over medium heat.
- Add the sliced white onion and sauté until softened and slightly caramelized.
- Remove from the pan and set aside.
- Cook the Beef:
- In the same pan, add the remaining 2 tablespoons of peanut oil or olive oil.
- Add the marinated beef and stir-fry until browned and cooked through. Remove the beef from the pan and set aside.
- Combine Ingredients:
- In the same pan, add the chopped garlic and sauté until fragrant.
- Add the soy sauce, oyster sauce, white vinegar, water, and black pepper.
- Stir well to combine the flavors.
- Cook the Vegetables:
- Add the cooked onions back into the pan, followed by the chopped Bok Choy.
- Stir-fry until the Bok Choy is wilted and cooked to your desired tenderness.
- Final Assembly:
- Add the cooked beef back into the pan and toss everything together until well combined and heated through.
- Serve:
- Serve the beef and Bok Choy stir-fry over a bed of white rice.
