Salmon with Love

Ingredients
- 2 salmon fillets (with skin)
- Salt and black pepper to taste
- Olive oil (for frying)
- 1 tbsp butter
- 1 tbsp lemon zest
- ΒΌ cup parsley, chopped
- Juice of 4 lemons
Directions
- Season the salmon with salt and black pepper.
- Heat olive oil in a pan over medium heat.
- Add the salmon, skin-side down, and cook for 4-5 minutes until crispy.
- Flip the salmon and add butter, lemon zest, and parsley.
- Cook for another 3-4 minutes, occasionally spooning the butter mixture over the salmon.
- Finish with freshly squeezed lemon juice and serve hot.
